烧麦作为临清面食行业四大名吃之一，已有百年历史。临清烧麦兼有小笼包与锅贴之优点，民间常作为宴席佳肴。其味道纯正，别具一格，和其他地方的烧麦味道完全不同。馅软而喷香、油而不腻，洁白晶莹，如玉石榴一般。

烧麦使用的是烫面，用绿豆干淀粉作铺面，走锤砸薄皮压成边缘褶皱的圆形面皮，包上加入精盐、味精、酱油、葱花、姜末、香油调味后的细腻牛肉馅料，边缘向上收拢，担成石榴嘴状，入笼用旺火蒸约十多分钟出笼。

烧麦一笼12个，成型的烧麦褶皱如花瓣，整体如花骨朵。皮薄光亮半透着内馅，隔皮见馅，馅香鲜嫩，洁白晶莹，如花般陈列，咬一口汤汁四溢，筋道又柔润，味香醇厚。

杂拌是八大碗中的一碗，杂拌几乎综合了八大碗的各式菜系：熟羊肉块、牛肉丸子、粉条丸子、松花肉、里脊肉。临清九大碗就是在原来八大碗的基础上去掉一个“肉杂拌”，添加上“羊尾烩海带”和“烩全羊”，即成为九大碗。
